Natural Process

Coffee cherries are layered and sealed with fresh passion fruit for 3-4 days of fermentation, using the passion fruit’s sugars to drive the fermentation process; followed by 23 days of slow drying and weeks of maturation, ultimately presenting rich tropical fruit aromas and smooth black tea wine notes.
