Carbonic Maceration

It is the world’s first coffee estate to successfully apply Carbonic Maceration—a technique borrowed from the winemaking industry—to coffee processing.
By placing whole coffee cherries into sealed tanks and infusing them with carbon dioxide, oxygen exposure is minimized, allowing fermentation to highlight the coffee’s fruity aromas.
The cherries are then naturally dried with their skins intact, further enhancing the sweetness and fruit-forward character. This method brings out vibrant notes of mango, pineapple, passion fruit, and honey, resulting in a crisp, layered cup.
