Granja Paraíso 92 is located in Piendamó, Cauca, Colombia, and run by the innovative Benítez family led by Wilton Benítez. Renowned for blending science with passion, this family farm features its own microbiology lab, quality lab, and processing facility. It uses terraced planting, drip irrigation, shade management, and precise lab-based nutrient control to cultivate rare varieties including Caturra.
At 1,900 meters elevation, the ideal equatorial climate and volcanic soil produce exceptionally clean and pure coffee flavors.
Wilton applies advanced fermentation techniques from wine and beer to coffee, creating world-class experimental specialty lots that have earned repeated international recognition, establishing it as a benchmark in modern Colombian coffee.

Yeast Heat Shock Proceessing

This batch of Yeast Thermal Shock employs an ultra-precise innovative process. It begins with hand-harvesting, followed by double screening by size and density, then dual sterilization using ozonated water and ultraviolet light to ensure zero contamination.
Fresh cherries are placed into an anaerobic bioreactor and fermented at 18°C for 52 hours, during which Saccharomyces pastorianus yeast is added to awaken deep aromatic layers.
After depulping, the mucilage is recovered and enters a second stage of 21°C anaerobic mucilage fermentation for 48 hours, bringing the total fermentation time to 68 hours.
This is followed by the signature thermal shock washing: first, 40°C hot water is used to open the bean pores and absorb secondary aromas, then instantly locked in with a 12°C cold-water shock to fix the flavor profile.
Finally, controlled drying at 38°C for 48 hours perfectly stabilizes the layered notes of blueberry, passion fruit, peach, and plum, delivering an exceptionally clean, rich, and unprecedented depth of fruit aromatics.
