Coffee cherries are oxidized in plastic tanks to release leachate; After separating the impurities from the cherries, they are placed in plastic tanks for anaerobic fermentation, and then thermal shock begins at 50 degrees, with yeast added in between to enhance the flavor. It is then quickly dried by machine to avoid affecting the flavor of the coffee beans. The sweetness, acidity, aroma and wine sensation of the coffee beans are enhanced by the thermal shock treatment, giving the coffee beans a more diverse and unique flavor, and the flavors of ginger flower, jasmine and citrus are brought out in this batch of coffee beans.
Origin introduction
Finca El Diviso Estate is located in the southern part of Huila Province, Colombia, at an altitude of approximately 1490 meters. The high altitude geographic characteristics extend the maturation period of the coffee beans, increase the density and hardness of the coffee beans, enhancing the quality and flavor of the coffee beans. At the same time, the great temperature difference in this area, with an average temperature of about 18°C throughout the year, results in different metabolic rates of the coffee beans during the day and night, promoting the formation of sugars and acidity in the coffee beans, increasing the sweetness and complexity of the coffee beans. The estate cultivates a variety of species, constantly innovating in processing and fermentation methods, exploring better flavor profiles. It is the source of beans for many world champion competitions, such as the 2022 WBC World Champion and the 2023 WBrC US Champion competitions, with its quality and flavor widely recognized in the coffee industry.
Design ideas
Born in the slums, the protagonist, despite living a simple life, has dreams of changing the world. The rose garden in the foreground of the painting symbolizes his beautiful and grand dreams; and the simple, fresh, and warm style of the painting also echoes the floral fragrance flavor of the Geisha.
