Ninety Plus Coffee是著名的精品咖啡豆商,名字的意思是指旗下莊園所出產的所有咖啡豆杯測分數皆達90分以上。
90+ Volcan Valley Coffee莊園坐落於巴拿馬的Baru火山附近,佔地270公頃,海拔高度1400至1800米。豐沃的火山土壤令這裡成為巴拿馬最優質的精品咖啡產區,是Geisha、Caturra等高品質咖啡豆的理想種植環境。為了嚴格監控及把關咖啡的品質,莊園由種植、收成、發酵、處理等各過程皆一手包辦。
Thermolic熱處理法
Thermolic熱處理法由Ninety Plus研發,常在30至50攝氏度的溫度範圍內進行,同時需要控制環境中的氧氣含量。藉助陽光或其他熱源,將咖啡櫻桃逐漸加熱至理想的發酵溫度。在這個過程中,咖啡果肉中的糖分、酵素、微生物會發生一系列的生物化學反應,產生出獨特的風味前驅物質。這些物質在後續的烘焙過程中,會進一步轉化為我們所感知到的咖啡風味。
與傳統的日曬或水洗法相比,Thermolic熱處理的溫度更高,發酵過程也更加劇烈。讓咖啡豆呈現出更加濃郁飽滿的風味,尤其在甜味、酒香和巧克力味道方面表現突出。Thermolic處理過的咖啡,口感厚實醇厚,餘韻綿長,彷彿在探索一段奇妙的風味旅程。
