Processing introduction

Chiroso is a natural variant from the town of Ulao, in the province of Antioquia. Although the tree shape is similar to that of Kadulla, the coffee beans are longer than Kadulla and more similar to the bourbon species. Since becoming the 2014 COE World Champion, the competition beans have become more and more known for their rich, fresh flavor performance, so they have gradually become the new favorite in Colombia.

The triple fermentation treatment method was born with reference to the winemaking method, and the coffee cherries after the anaerobic fermentation process are placed in an anaerobic environment with different microorganisms for the third fermentation, so that the coffee beans can produce different microorganisms and chemical reactions, improve the sweetness, acidity, aroma and wine sense of the coffee beans, and bring wine, apple, citrus and floral aromas to this batch of coffee beans.

Estate Introduction

Finca El Diviso Estate is located in the southern part of Huila Province, Colombia, at an altitude of approximately 1490 meters. The high altitude geographic characteristics extend the maturation period of the coffee beans, increase the density and hardness of the coffee beans, enhancing the quality and flavor of the coffee beans. At the same time, the great temperature difference in this area, with an average temperature of about 18^°C throughout the year, results in different metabolic rates of the coffee beans during the day and night, promoting the formation of sugars and acidity in the coffee beans, increasing the sweetness and complexity of the coffee beans. The estate cultivates a variety of species, constantly innovating in processing and fermentation methods, exploring better flavor profiles. It is the source of beans for many world champion competitions, such as the 2022 WBC World Champion and the 2023 WBrC US Champion competitions, with its quality and flavor widely recognized in the coffee industry.
